Carrot Oats Muffins

Instructions

  • Line  muffin tray with muffin liners.
  • Pre heat the oven to 180° C.
  • Mix all purpose flour, whole wheat flour, plain oats, baking powder, baking soda, salt, brown sugar, cinnamon powder and nutmeg powder in a bowl.
  • Mix Sunsolite oil, eggs and vanilla extract in another bowl.
  • Mix the wet ingredients with the dry ingredients.
  • Add grated carrots and mix gently.
  • Pour the butter in the muffin liners until they are 3/4th full.
  • Bake for 15-18 minutes until a tooth pick comes out clean.
  • Cool and serve.

  • All purpose flour – ½ cup
  • Whole Wheat Flour – ½ cup
  • Plain oats – ½ cup
  • Baking powder – 1 tsp
  • Baking Soda – ½ tsp
  • Salt – ¼ tsp
  • Brown sugar – ¾ cup
  • Cinnamon powder – ¼ tsp
  • Nutmeg powder – ¼ tsp
  • Sunsolite Oil – ¼ cup
  • Eggs – 2
  • Vanilla Extract – 1 tsp
  • Grated carrots – ½ cup
