Instructions
- Line muffin tray with muffin liners.
- Pre heat the oven to 180° C.
- Mix all purpose flour, whole wheat flour, plain oats, baking powder, baking soda, salt, brown sugar, cinnamon powder and nutmeg powder in a bowl.
- Mix Sunsolite oil, eggs and vanilla extract in another bowl.
- Mix the wet ingredients with the dry ingredients.
- Add grated carrots and mix gently.
- Pour the butter in the muffin liners until they are 3/4th full.
- Bake for 15-18 minutes until a tooth pick comes out clean.
- Cool and serve.
